Abstract

The rapid expansion of India’s food and beverage sector has positioned restaurant franchising as a dominant strategy for achieving scale, market penetration, and operational consistency. However, while international restaurant chains have successfully leveraged franchising to establish standardized and scalable operations, many domestic restaurant enterprises in India continue to face structural barriers that limit their ability to replicate similar success. These barriers include fragmented supply chains, inconsistent operational practices, limited technological integration, and weak franchise governance mechanisms. This study addresses this gap by critically examining the strategic frameworks adopted by successful restaurant food supply franchising models in India and developing a context-specific framework tailored for domestic restaurant businesses.
Adopting a qualitative, exploratory research design grounded in an interpretivist paradigm, the study investigates how strategic decisions are formulated and implemented within the Indian restaurant franchising ecosystem. Primary data were collected through in-depth, semi-structured interviews with 20 industry stakeholders, including franchisors, franchise owners, senior operations managers, and supply chain professionals. Participants were selected using purposive sampling to ensure the inclusion of individuals with direct strategic and operational experience across different restaurant formats, including quick service restaurants, casual dining, and cloud kitchen models. Data was analyzed using thematic analysis to identify recurring strategic patterns, success determinants, and systemic constraints influencing franchising outcomes.
The findings indicate that successful restaurant food supply franchising models in India are underpinned by five interdependent strategic dimensions: centralized and integrated supply chain systems, rigorous standardization of operating procedures, structured franchisee training and support mechanisms, strategic deployment of digital technologies, and controlled localization of menus and branding. The study also identifies critical challenges faced by domestic restaurants, including regulatory complexity, capital constraints, high real estate costs, and organizational resistance to formalization and technology adoption.
Based on these insights, the study proposes a comprehensive strategic framework designed specifically for domestic restaurants in India. The framework integrates global best practices with local market realities, offering a pragmatic roadmap for sustainable franchising implementation. This research contributes to franchising literature by extending theory into an emerging market context and provides actionable guidance for practitioners seeking to scale domestic restaurant enterprises through franchising.
